Summer Recipes

Work has been slowing down a bit this past week, so I’ve been taking advantage of this new found free-time to actually cook my supper! My go-to meal usually consists of throwing salmon in the oven with olive oil, lemon, & spices. Despite how many times I’ve cooked it, it’s still my favorite meal, but I can’t well eat it every night.

I love to eat seasonally, and summer means some of my absolute favorite ingredients: artichokes, avocado, cold soups, seafood, tomatoes, and lots of other fresh ingredients. In an attempt to grow from my typical salmon meal, I’ve gathered some summer recipes that I’m itching to try.

  1. The seafood avocado salad doesn’t have a recipe link attached to it. Could you shed some light on the ingredients, mainly whatever dressing that is?

    1. Goodness, I wish I knew! My belly grumbles just looking at that picture. I’m thinking about trying to recreate it this summer. The dressing looks like a creamy vinaigrette or maybe a lemon caesar.
